Tahu Jepang Saos Padang Recipe

Ingredients:

  • 2 packs of tofu (approximately 1/4 kg), cut into cubes
  • 1/4 kg shrimp, peeled and deveined
  • 3 tablespoons Padang sauce (adjust to taste)
  • 2 tablespoons tomato and chili sauce (adjust to taste)
  • 5 small red chilies, sliced thinly
  • 1 onion, sliced
  • 3 shallots, sliced
  • 5 red chilies (for the spice paste)
  • 3 cloves garlic (for the spice paste)
  • 1 teaspoon ground black pepper (for the spice paste)
  • 1 tablespoon ginger, minced (for the spice paste)
  • 1 tablespoon cornstarch, dissolved in water

Instructions:

  1. Prepare the Spice Paste: In a blender or food processor, combine the 5 red chilies, garlic, ground black pepper, and minced ginger. Blend until you achieve a smooth paste.

  2. Sauté the Aromatics: Heat a generous amount of oil in a large pan over medium heat. Add the sliced onions and shallots, and sauté until they become translucent and fragrant.

  3. Cook the Spice Paste: Add the prepared spice paste to the pan with the onions and shallots. Cook for about 2-3 minutes, stirring frequently, until the paste releases its aroma and starts to darken slightly.

  4. Add Shrimp: Toss the peeled shrimp into the pan. Cook for 3-4 minutes, or until the shrimp turn pink and are cooked through.

  5. Add Liquids: Pour in enough water to cover the ingredients and bring it to a boil. Allow it to simmer for a few minutes.

  6. Thicken the Sauce: Stir in the dissolved cornstarch, and continue to cook until the sauce thickens.

  7. Add Tofu: Gently fold the tofu cubes into the pan. Cook for an additional 3-4 minutes, allowing the tofu to absorb the flavors of the sauce.

  8. Season: Add the Padang sauce and tomato-chili sauce according to your taste preferences. Adjust seasoning as necessary.

  9. Final Touches: Garnish with sliced red chilies for an extra kick, if desired.
