Crab and Shrimp in Egg Sauce
Ingredients:
- 1 kg (2.2 lbs) fresh crab or mud crab, cleaned
- 1 kg (2.2 lbs) large shrimp, peeled and deveined
- 2 large eggs, beaten
- 3 large ripe tomatoes, blended into a smooth sauce
- 5 cloves garlic, finely chopped
- 2 large onions, coarsely chopped
- 4 stalks green onions, roughly sliced
- 2 red chilies, finely sliced (adjust to taste)
- 1 thumb-sized piece of ginger, thinly sliced
- 2 kaffir lime leaves
- 1 small stalk lemongrass, bruised
- 1/2 teaspoon ground black pepper
- 3 tablespoons soy sauce
- A splash of fish sauce
- Salt to taste
- Seasoning to taste
- Sugar to taste
- Cooking oil or butter for sautéing

Sauté Aromatics:
- Heat a generous amount of cooking oil or butter in a large pan over medium heat. Add the finely chopped garlic and cook until fragrant, about 1 minute.
- Stir in the blended tomatoes and cook for another 2 minutes until the mixture begins to simmer.

- Introduce the finely sliced red chilies, ginger, kaffir lime leaves, and bruised lemongrass. Stir well and cook until the mixture starts to bubble.

- Add the shrimp, fish sauce, soy sauce, salt, seasoning, and sugar to taste. Stir thoroughly to combine all the ingredients.
