Dadar Telur Kuah: A Delightful Indonesian Egg Soup

Ingredients:

  • 2-3 large eggs, beaten
  • 1 ripe tomato, seeded and chopped
  • 1 stalk of green onion (or scallion), finely chopped
  • 4-5 sprigs of celery leaves
  • 1 clove garlic, finely minced
  • 4-5 tablespoons sesame oil
  • Salt, to taste
  • Mushroom seasoning (or any preferred seasoning), to taste
  • Ground black pepper, to taste
  • Water, as needed

Instructions:

  1. Prepare the Egg Crepes: Start by preparing the egg crepes. Heat a non-stick pan over medium heat and lightly grease it. Pour in the beaten eggs, spreading them evenly to form thin crepes. Cook until the eggs are fully set and golden. Remove from the pan and set aside.

  2. Sauté Aromatics: In a separate pot, heat the sesame oil over medium heat. Add the minced garlic and sauté until it becomes fragrant and turns a golden brown, but be careful not to let it burn, as this can make the broth bitter.

  3. Cook the Vegetables: Add the finely chopped green onion to the pot and sauté briefly until it softens. Next, add the chopped tomato and stir for a few moments, allowing the tomato to cook slightly and release its juices.

  4. Make the Broth: Pour in enough water to create a flavorful broth, adjusting the quantity according to your preference. Season with salt, mushroom seasoning, and ground black pepper to taste. Bring the mixture to a boil, then reduce the heat and let it simmer for a few minutes. Taste and adjust the seasoning as needed.

  5. Add the Egg Crepes: Before the broth reaches a rolling boil, gently add the cooked egg crepes into the pot. Allow them to heat through in the broth, stirring gently to combine. Simmer for a few more minutes to ensure everything is heated through.

  6. Finish and Serve: Just before serving, add the celery leaves to the pot and give the soup a final stir. Turn off the heat and ladle the soup into bowls. For the best flavor, enjoy the soup while it is still hot, as it may develop a slightly unpleasant odor if left to cool.
