Sweet and Sour Egg Rolls (Telur Gulung Asam Manis)

Instructions

  1. Prepare the Egg Mixture: In a mixing bowl, whisk the eggs together with the finely sliced green onions. Season with salt and pepper, blending well until the mixture is fully combined.

  2. Cook the Egg Rolls:

    • Heat a non-stick frying pan (teflon) over medium heat and add a small amount of margarine to grease the surface.
    • Pour a ladleful of the egg mixture into the pan, spreading it evenly to form a thin layer.
    • Once the edges begin to set and the top remains slightly wet, gently roll the egg from one side to the other using two spoons, leaving a small portion at the end unrolled.
    • Add more egg mixture to the pan, repeating the process, ensuring that the previously rolled egg becomes a part of the new layer.
    • Continue rolling until all the egg mixture is used up. Finally, cook the rolled eggs on all sides until they are golden brown and cooked through. Remove from the pan, slice into bite-sized pieces, and set aside.
  3. Make the Sweet and Sour Sauce:

    • In a small saucepan, heat a bit of margarine over medium heat. Add the chopped garlic and sauté until fragrant.
    • Stir in the tomato sauce, oyster sauce, ground pepper, and sugar.
    • Gradually add water as needed, mixing well until everything is incorporated and the sauce reaches a gentle simmer.
    • Taste and adjust the seasoning if necessary.
    • Finally, stir in the cornstarch mixture to thicken the sauce, cooking until it reaches your desired consistency.
  4. Serve: Arrange the sliced egg rolls on a serving plate and drizzle the sweet and sour sauce over the top, or serve it on the side for dipping.

For those who prefer a thicker sauce, reduce the amount of water added to the sauce.
