Simple Indonesian Padang Style Omelette (Telur Dadar Rumah Makan Padang)

Rice flour (Tepung Beras) 3 tablespoons
Chopped green onions To taste
Instant coconut milk (Santan) 1 sachet
Water (for dissolving flour) 3 tablespoons
Ground Spices:
Black pepper (Merica) 1 teaspoon
Coriander (Ketumbar) 1/2 teaspoon
Bird’s eye chili (Cabe Tampar) 3 (add more for heat if desired)
Candlenuts (Kemiri) 1 tablespoon
Salt (Garam) 1 tablespoon
Sugar (Gula) 1/2 tablespoon

Instructions

  1. Prepare the Spice Mixture: In a mortar and pestle or food processor, finely grind the black pepper, coriander, bird’s eye chili, candlenuts, salt, and sugar until you achieve a smooth paste.

  2. Combine the Ingredients: In a mixing bowl, combine the ground spice mixture with the rice flour and the 3 tablespoons of water. Mix well until smooth and uniform.

  3. Add the Eggs: Crack the eggs into the mixture, followed by the chopped green onions and the sachet of instant coconut milk. Stir thoroughly until all ingredients are well incorporated and the mixture is solid.

  4. Fry the Omelette: Heat a generous amount of oil in a frying pan over medium-high heat. Once the oil is hot, pour in the egg mixture. Allow it to cook until the bottom is golden brown. Carefully flip the omelette to cook the other side until it is also golden.

  5. Serve: Once cooked through, remove the omelette from the pan and let it drain on a paper towel to remove excess oil. Slice and serve warm as a delicious breakfast or snack.
