Tahu Walek Bumbu Petis

Ingredients

Fried tofu (tahu goreng) 500 grams
Chicken breast (boneless) 500 grams, blended to a paste
All-purpose flour 200 grams
Eggs 2
Cooking oil As needed
Spices (to blend)
Garlic 10 cloves
Shallots (bawang merah) 7 cloves
Pepper To taste
Salt To taste
Petis sauce
Red petis (from Madura) To taste
Chili peppers To taste
Granulated sugar To taste
Salt To taste
Tamarind paste To taste

Instructions

  1. In a mixing bowl, combine the blended chicken, all-purpose flour, and eggs. Add the ground spices along with enough water to form a smooth, pliable dough. Knead until well combined.

  2. Prepare the fried tofu by gently opening the center and turning it inside out. Fill each piece with about one tablespoon of the chicken mixture, ensuring the tofu is well-stuffed.

  3. Heat the cooking oil in a frying pan over medium heat. Fry the stuffed tofu until golden brown, turning occasionally for even cooking. Once done, drain on paper towels.

  4. For the petis sauce, grind the red petis, chili, sugar, salt, and tamarind until you achieve a smooth consistency.

  5. Serve the crispy tahu walek with the petis sauce drizzled on top or on the side for dipping.
