Instructions
For the Cake
- Preheat your oven to 350°F (175°C) and prepare two round 8-inch pans by greasing and flouring them.
- In a large mixing bowl, combine cake flour, sugar, baking powder, salt, shortening, milk, and vanilla. Beat on low speed for about 30 seconds, scraping the bowl occasionally, then increase to high speed and beat for 2 minutes.
- Add egg whites and beat on high for another 2 minutes until well blended.
- Gently fold in the melted white chocolate until fully incorporated.
- Divide the batter evenly between the prepared pans and bake for 30 to 35 minutes, or until a wooden pick inserted into the center comes out clean.
- Allow the cakes to cool completely, then carefully slice each cake in half lengthwise to create four layers.
For the Mousse (recommended to prepare the night before)
- Melt 1 1/2 cups of white chocolate in a double boiler and set aside.
- Puree the fresh strawberries in a blender.
- In a small saucepan, combine the pureed strawberries with preserves and cook over medium heat, stirring constantly, until the mixture thickens and is just about to boil. Remove from heat and let cool slightly.
- Fold the strawberry mixture into the melted chocolate until combined. Allow this mixture to cool to a tepid temperature.
- Gently fold in whipped cream, followed by egg whites, until fully integrated. Cover and refrigerate for at least 8 hours or overnight to set.
For the Icing
- In a medium saucepan, combine the melted chocolate and flour. Gradually blend in milk, cooking over medium heat while stirring constantly until the mixture thickens, resembling the consistency of melted chocolate.
- Allow to cool completely. In a large mixing bowl, cream together sugar, butter, and vanilla until light and fluffy.
- Gradually add the cooled chocolate mixture, blending until just combined—avoid over-mixing to prevent it from becoming runny.
To Assemble the Cake
- Spread a layer of mousse between the layers of cake, ensuring there are three mousse layers in total. Be cautious not to allow any mousse to leak out, as this will complicate the icing process.
- Once assembled, place the cake in the freezer for about 30 minutes to set.
- Meanwhile, melt the remaining 3 ounces of chocolate. Arrange thinly sliced strawberries on a sheet covered with plastic wrap, and drizzle melted chocolate over them in thin ribbons.
- Remove the cake from the freezer and ice generously with white chocolate icing, creating soft peaks with a spatula.
- Decorate the top of the cake with the chocolate-drizzled strawberries arranged in a circle, and optionally, create a “flower” using five strawberries in the center.
