Sagú Nora

Description: Sagú Nora is a delightful dessert that beautifully combines the richness of tapioca with the aromatic flavors of cinnamon and vanilla, creating a creamy and comforting dish perfect for any occasion.


Ingredients

Red wine 1 liter
Cinnamon sticks 2 sticks
Boiled water 1/2 liter
Tapioca (sagú) 1 cup
Sugar 1 1/2 cups
Milk 1 liter
Sugar 1 cup
Vanilla essence A splash
Cloves 4 cloves
Cinnamon stick 1 stick
Egg yolks 3 yolks

Instructions

  1. In a large pot, combine the red wine, 2 sticks of cinnamon, and 1/2 liter of boiled water. Bring the mixture to a gentle simmer over medium heat.

  2. Add the 1 cup of tapioca to the pot, stirring frequently to prevent clumping. Allow it to cook until the tapioca becomes translucent, about 15-20 minutes.

  3. In a separate saucepan, heat 1 liter of milk with 1 1/2 cups of sugar, stirring until the sugar dissolves completely.

  4. Once the tapioca is cooked, pour the milk mixture into the pot with the tapioca. Stir in a splash of vanilla essence, 4 cloves, and 1 cinnamon stick.

  5. In a small bowl, whisk the 3 egg yolks. Slowly temper the yolks by adding a bit of the hot tapioca mixture to them, then gradually mix the yolks back into the pot.

  6. Continue to cook the mixture over low heat, stirring constantly until it thickens slightly, approximately 5-10 minutes.

  7. Remove from heat and let it cool slightly before serving. You can enjoy Sagú Nora warm or chilled, garnished with additional cinnamon if desired.
