Instructions
-
In a large pot, combine the red wine, 2 sticks of cinnamon, and 1/2 liter of boiled water. Bring the mixture to a gentle simmer over medium heat.
-
Add the 1 cup of tapioca to the pot, stirring frequently to prevent clumping. Allow it to cook until the tapioca becomes translucent, about 15-20 minutes.
-
In a separate saucepan, heat 1 liter of milk with 1 1/2 cups of sugar, stirring until the sugar dissolves completely.
-
Once the tapioca is cooked, pour the milk mixture into the pot with the tapioca. Stir in a splash of vanilla essence, 4 cloves, and 1 cinnamon stick.
-
In a small bowl, whisk the 3 egg yolks. Slowly temper the yolks by adding a bit of the hot tapioca mixture to them, then gradually mix the yolks back into the pot.
-
Continue to cook the mixture over low heat, stirring constantly until it thickens slightly, approximately 5-10 minutes.
-
Remove from heat and let it cool slightly before serving. You can enjoy Sagú Nora warm or chilled, garnished with additional cinnamon if desired.
