Ingredients:

Main Ingredients Quantity
Tuna (Tongkol) 1/2 kg

For the Spice Blend (Bumbu Halus):

Spices and Aromatics Quantity
Large red chili peppers 10
Small red chili peppers 10
Shallots 5
Ginger 1 small piece
Garlic 4 cloves
Ground coriander (ketumbar) 1 small packet
Large red tomato 1

For the Garnish and Seasoning:

Additional Ingredients Quantity
Palm sugar (gula merah) to taste
Seasoning powder (penyedap) to taste
Water 4 tablespoons

Instructions:

  1. Prepare the Tuna
    Begin by cleaning the tuna thoroughly and then deep-frying it until fully cooked and crispy. Set aside.

  2. Make the Spice Blend
    In a blender or food processor, blend together the large red chilies, small red chilies, shallots, garlic, ginger, and ground coriander until smooth.

  3. Cook the Spice Mixture
    Heat a small amount of oil in a pan over medium heat, then sauté the blended spice mixture until fragrant and the oil begins to separate. Add the palm sugar and stir until it dissolves.

  4. Add Seasonings
    Pour in 4 tablespoons of water and season with seasoning powder. Stir well to combine all the flavors.

  5. Combine with Tuna
    Gently add the fried tuna into the pan with the spice mixture. Stir briefly to ensure the tuna is well-coated with the spicy sauce.

  6. Serve
    Once everything is well-mixed and the flavors are absorbed, transfer to a serving dish. Your spicy Balado Tuna is now ready to serve!
