Perkedel Tempe (Tempe Fritters)

This delightful Indonesian snack, Perkedel Tempe, is a savory and crispy fritter made with tempe, a fermented soybean cake that’s packed with flavor and nutrients. It’s crispy on the outside and soft on the inside, offering a satisfying combination of textures. Traditionally enjoyed with a dipping sauce, these fritters make for a perfect appetizer or snack.

Ingredients

Ingredient Amount
Tempe (fermented soybean cake) 100g, mashed with a fork
Whole egg 1 egg
Egg white 1 egg white
All-purpose flour (for binding) As needed
Kaffir lime leaves 2 leaves, finely sliced
Ground black pepper ½ teaspoon
All-purpose seasoning flour 2 tablespoons
Garlic cloves 1 clove, finely chopped
Green onions (scallions) A handful, finely chopped
Red curly chili pepper 1, thinly sliced
Chicken stock powder or salt To taste

Instructions

  1. Prepare the Ingredients
In a large bowl, combine the mashed tempe with the whole egg, egg white, finely sliced kaffir lime leaves, ground black pepper, seasoning flour, minced garlic, chopped green onions, and red chili slices. Mix all ingredients well until they are evenly incorporated.

  2. Season and Test
Taste the mixture and adjust the seasoning by adding salt or chicken stock powder to your liking.

  3. Fry the Fritters
In a separate bowl, beat the egg white until it becomes slightly frothy. Take a spoonful of the tempe mixture, dip it into the egg white, and gently fry it in hot oil. Cook until the fritters turn golden brown and crisp on both sides.

  4. Serve and Enjoy
Once fried, place the fritters on paper towels to drain excess oil. Serve them warm with a dipping sauce of your choice for an added touch of flavor.

These Perkedel Tempe are perfect for any gathering or as a quick snack to enjoy with friends and family. The combination of crispy edges with a rich, savory filling makes them irresistible!
