Instructions

  1. Prepare the Dal: Start by rinsing the Arhar dal thoroughly under running water. In a pressure cooker, combine the rinsed dal with 3/4 cup of water and 1/2 teaspoon of turmeric powder. Cook on high heat until you hear a whistle, then reduce the heat and let it cook for 2 more whistles. After cooking, turn off the heat and allow the pressure to release naturally. Once it’s safe to open, mash the dal gently with the back of a ladle until smooth, and set it aside.

  2. Simmer the Dal: In a kadai, add the mashed dal and place it over low heat to simmer. If the dal is too thick, add water to achieve your desired consistency. Once the dal begins to boil, stir in the Maharashtrian Goda masala, jaggery, and the tamarind juice. Mix well and let it simmer on low heat for about 10 minutes, allowing the flavors to meld together.

  3. Prepare the Tadka: In a small tadka pan, heat the sunflower oil and ghee together. Once hot, add the mustard seeds and wait for them to crackle. Follow by adding cumin seeds, asafoetida, curry leaves, and green chillies. Sauté for about a minute until fragrant.

  4. Combine and Serve: Pour the prepared tadka over the simmering dal and give it a gentle stir. Switch off the flame and garnish with fresh chopped coriander leaves. Serve hot with freshly steamed rice and a dollop of ghee for an authentic experience.
