Instructions

  1. Prepare the Catfish: Start by seasoning the catfish thoroughly with seasoned flour. Make sure to coat it evenly for a crispy finish. In a deep frying pan, heat oil and fry the catfish until it is golden brown and cooked through. Once done, remove from the oil and set aside.

  2. Prepare the Sambal: In a mortar and pestle, begin by grinding the shallots and garlic together until they form a smooth paste. Next, add the red bird’s eye chilies and curly red chilies to the mix, continuing to grind until well combined. Finally, add salt and sugar to taste, followed by a drizzle of the leftover frying oil from the catfish. This oil adds a rich flavor to the sambal. Adjust the seasoning according to your preference.

  3. Combine and Serve: Gently mix the fried catfish into the sambal, ensuring that the flavors are well distributed. Use a spatula to lightly press and mix the fish with the sambal, which helps in infusing the spices into the catfish. Your Geprek Lele is now ready to be served!
