Instructions

For the Dal Filling

  1. Prepare the Dal:
    • Begin by washing and soaking the yellow moong dal in water for approximately 30 minutes. This will help soften the dal and reduce cooking time.
  2. Cook the Dal:
    • In a medium-sized pan, add the soaked dal along with salt, turmeric powder (haldi), and one cup of the water used for soaking.
    • Bring the mixture to a boil over medium flame and let it simmer for about 10-12 minutes. You should check the dal frequently; it should be tender yet still hold its shape, avoiding any mushiness.
  3. Season the Dal:
    • Once cooked, turn off the flame and drain any excess water from the dal.

  3. Assemble the Parathas:

    • Dust each portion of dough lightly in flour, then flatten it with your hands and roll it into a circle approximately 3 inches in diameter.
    • Place about 2 tablespoons of the prepared dal filling in the center of the rolled dough. Gather the edges together and pinch them to seal the filling inside, ensuring no gaps remain.
    • Gently flatten the stuffed dough ball and roll it out into a larger circle, roughly 6-7 inches in diameter, being careful not to let the filling escape.

Cooking the Parathas

  1. Cook the Parathas:
    • Heat a skillet or tawa over medium heat. Once hot, place the rolled paratha onto the skillet and cook it for a minute or until the underside begins to show golden brown spots.
    • Drizzle a small amount of ghee over the top and flip the paratha to cook the other side. Repeat the process until both sides are golden brown and fully cooked through.
    • Continue with the remaining dough portions and filling until all parathas are prepared.
