Pesmol Bawal with Eggs

Ingredients

Quantity Ingredient
1 Fresh Bawal Fish
1/4 Egg
3 Starfruit
5-10 Red Bird’s Eye Chilies (to taste)
10-15 Red Chilies
5-8 Shallots
3 Garlic
3 Candlenuts
To taste Ginger
To taste Turmeric
3 Bay Leaves
1 1/2 Tomatoes (diced)
2 small glasses Water
To taste Cooking Oil
To taste Salt

Instructions

  1. Begin by cleaning the fish thoroughly. Rub salt and starfruit over the fish to eliminate any fishy odor. While waiting, boil the egg in a separate pot until fully cooked.

  2. Prepare the spice mixture by blending the chilies, ginger, turmeric, candlenuts, and shallots until smooth. You can also use a mortar and pestle if preferred.

  3. In a frying pan, heat oil over medium heat and fry the fish until it turns golden brown. Once done, peel the boiled egg.

  4. In the same pan, add a little more oil and sauté the blended spice mixture until fragrant. Then, add water along with the diced tomatoes and bay leaves. Allow the mixture to come to a boil.

  5. Once boiling, carefully add the fried fish and boiled egg into the pan. Let everything simmer until the flavors meld and the fish is cooked through.
