Pesmol Bawal with Eggs

Instructions

Begin by cleaning the fish thoroughly. Rub salt and starfruit over the fish to eliminate any fishy odor. While waiting, boil the egg in a separate pot until fully cooked.

Prepare the spice mixture by blending the chilies, ginger, turmeric, candlenuts, and shallots until smooth. You can also use a mortar and pestle if preferred.

In a frying pan, heat oil over medium heat and fry the fish until it turns golden brown. Once done, peel the boiled egg.

In the same pan, add a little more oil and sauté the blended spice mixture until fragrant. Then, add water along with the diced tomatoes and bay leaves. Allow the mixture to come to a boil.

Once boiling, carefully add the fried fish and boiled egg into the pan. Let everything simmer until the flavors meld and the fish is cooked through.
