Prepare the Fish:
- Clean the catfish thoroughly and cut each fillet into two portions.
- Crack the egg into a small bowl and beat it well.
- Dredge the fish in the instant batter mix, then dip it in the beaten egg, and finally coat it in the batter mix once again. This double-coating ensures a crispy texture.

Fry the Fish:
- In a deep skillet or pan, heat oil over medium-high heat.
- Fry the coated catfish pieces until golden and crispy. Remove from oil and set aside on paper towels to drain any excess oil.

Prepare the Spicy Sauce:
- Thinly slice the onion, bird’s eye chilies, and large red chilies.
- Slice the carrot, green onion, and tomato.
- In a separate pan, heat a small amount of oil over medium heat. Sauté the sliced onion until translucent.
- Add the chilies and cook for a minute, then add the carrot and green onion, cooking just until slightly softened.
- Season with salt and sugar as desired. Pour in the water and bring the sauce to a gentle boil, stirring occasionally.
- Taste and adjust seasonings as needed for a balanced sweet, salty, and spicy flavor.
