Bandeng Presto with Balinese Spiced Tempe

Bird’s Eye Chilies (Cabai Rawit) 6 pieces
Shallots (Bawang Merah) 7 pieces
Garlic (Bawang Putih) 3 cloves
Candlenuts (Kemiri) 3 nuts
Turmeric (Kunyit) 1/2 finger-sized piece
Coriander (Ketumbar) 1/2 teaspoon

Instructions

  1. Prepare the Tempe: Slice the tempe into thick triangle pieces and fry them until they are halfway cooked. Set aside.

  2. Cook the Fish: Next, fry the Bandeng Presto until it is nicely cooked and golden brown, then set aside.

  3. Sautรฉ the Spices: In a hot pan, sautรฉ the ground spice mixture until fragrant. Add in the torn kaffir lime leaves, lemongrass, and crushed galangal, stirring occasionally.
