Instructions

Step 1: Prepare the Soya Chunks
Begin by boiling some water with a pinch of salt in a saucepan. Once the water is boiling, add the soy granules. Turn off the heat, cover the saucepan, and let it sit for 15 minutes, allowing the soy chunks to hydrate and double in size. After 15 minutes, drain the excess water using a large strainer and place the rehydrated soya chunks in a bowl to cool.

Step 2: Process the Mushroom and Soya Mixture
In a food processor, add the finely chopped mushrooms and pulse a few times until they are minced. Next, incorporate the cooled soya chunks into the processor and pulse again until the mixture is well combined. Set this mushroom and soya mixture aside.
