  2. Grind the Batter:
    The following day, drain the soaked ingredients and transfer them to a blender or food processor. Add the finely chopped onion, green chillies, curry leaves, grated coconut, and salt to the mixture. Gradually add water as needed to achieve a thick yet pourable consistency, blending until smooth. The batter should be thick but still able to flow freely.

  3. Prepare the Dosa:
    Heat a non-stick skillet or tawa over medium heat until hot. Once ready, pour a ladleful of batter onto the center of the skillet and spread it outward in concentric circles, creating a dosa of your desired size and thickness. Drizzle a few drops of oil or ghee around the edges of the dosa to enhance flavor and crispiness.

  4. Cook the Dosa:
    Cover the dosa with a lid and allow it to cook until the edges begin to turn golden brown and the surface is set, which usually takes about 2-3 minutes. Carefully lift the dosa with a spatula, and flip it over to cook the other side for an additional 1-2 minutes. You want both sides to be golden and slightly crisp.

  5. Serve:
    Once cooked, remove the dosa from the skillet and place it on a warm plate. Repeat the process with the remaining batter, adjusting the heat as necessary to prevent burning.
