Instructions:

Making the Sweet Potato Gnocchi:

  1. Prepare the Potatoes: Start by peeling the boiled sweet potatoes and regular potatoes (Aloo). Place them in a large mixing bowl. Mash them well until smooth, ensuring no lumps remain.

  2. Mix the Ingredients: Add the whole eggs to the mashed potatoes and mix thoroughly. Slowly incorporate the whole wheat flour and salt into the mixture, then knead until a soft dough forms. If the dough is too sticky, gradually add a teaspoon of flour until you achieve the right consistency.

  3. Shape the Gnocchi: Lightly dust your kitchen counter with flour. Divide the dough into 4 equal-sized balls. Using your palms, roll each ball into a long, cylindrical shape about 10 inches in length. Cut each “rope” of dough into 1-inch pieces. Repeat with the remaining dough.

  4. Cook the Gnocchi: Bring a large pot of water to a boil over high heat. Once boiling, carefully drop half of the gnocchi pieces into the water. Let them cook for about 5-8 minutes, or until they rise to the surface. Once they float, allow them to cook for another 1-2 minutes to ensure they’re tender. Remove the gnocchi with a slotted spoon and place them in a colander to drain. Repeat the process with the remaining gnocchi.

  5. Toss with Olive Oil: Drizzle the cooked gnocchi with a tablespoon of olive oil and set them aside in a bowl while you prepare the garlic herb butter sauce.

Making the Garlic and Herb Butter Sauce:

  1. Roast the Garlic: Heat a skillet over medium heat and add 1 tablespoon of butter. Once the butter melts, add the chopped garlic and cook, stirring occasionally, until the garlic turns a rich golden brown and becomes fragrant. Remove the skillet from the heat and set it aside.

  2. Prepare the Herb Butter: In a mixing bowl, combine the remaining 4 tablespoons of butter, cinnamon powder, brown sugar, dried oregano, chopped chives, salt, and lemon juice. Add the roasted garlic and the infused butter from the skillet. Stir everything together until the ingredients are well combined.

Serving the Gnocchi:

  1. Sauté the Gnocchi: Heat a skillet over medium heat and add the prepared garlic and herb butter mixture. Stir until it melts and becomes bubbly. Add the gnocchi in small batches, stirring occasionally and cooking for 3-4 minutes or until they are lightly browned and crisp on the edges.

  2. Serve: Once the gnocchi are crispy and golden, serve them warm on a plate. For an extra touch, drizzle with additional olive oil and top with freshly grated cheese. Enjoy with a glass of your favorite wine for a truly indulgent meal.

Tips for Success:

  • Flour Adjustments: If you find the dough too sticky or too dry, add a little more flour or a small splash of water, respectively, to achieve the right texture.
  • Gnocchi Cooking Tip: Ensure you don’t overcrowd the pot when boiling gnocchi, as this could cause them to stick together or not cook evenly.
  • Herb Variations: Feel free to experiment with different herbs like thyme or rosemary for a unique twist in the butter sauce.
  • Make Ahead: Gnocchi can be made in advance and stored in the fridge for up to 24 hours before cooking. Alternatively, you can freeze them for up to 3 months.
