Instructions for Goan Dessert Sakhar Bhaat

  1. Wash the Rice
Begin by thoroughly washing the basmati rice under cold running water. Rinse it about 3 to 4 times until the water runs clear. Once washed, soak the rice in water for 20 minutes to allow the grains to soften.

  2. Fry the Nuts and Raisins
In a medium-sized saucepan, heat 1 tablespoon of ghee over a medium flame. Add the mixed nuts and raisins to the pan and sauté them for a minute or two, just until the nuts are lightly golden and the raisins swell up. Remove them from the pan and set them aside.

  3. Cook the Rice
In the same saucepan, add the remaining ghee along with 2-1/2 cups of water, a pinch of salt, and saffron strands. Stir the mixture well and bring it to a boil over medium-high heat. Once the water begins to boil, add the soaked rice to the pan. Mix gently, cover the pan, and let the rice cook on medium heat.

  4. Avoid Overflows
While the rice cooks, it’s important to leave a small gap in the lid so that steam can escape, preventing the rice from overflowing. After 5 to 6 minutes, the water will begin to be absorbed by the rice. At this point, reduce the heat to a low simmer, and let the rice cook gently until it is tender and fully cooked, stirring occasionally to ensure even cooking.

  5. Add the Sugar and Spices
Once the rice is cooked and soft, stir in the sugar, fried mixed nuts, raisins, and cardamom powder. Mix everything together gently to combine. Cover the pan again and let it simmer on low heat for another 5 minutes to allow the sugar to melt and the flavors to blend.

  6. Serve the Dessert
Remove the pan from the heat and give the rice one final stir. Let the Sakhar Bhaat sit covered for a minute or two to allow the flavors to fully infuse. Serve it warm as a delicious Goan dessert.
