Instructions:

Step 1: Preparing the Dough
To begin with, take 150 grams of whole wheat flour and knead it into a smooth dough by gradually adding water. You can add a little bit of oil to the dough to keep it soft and pliable. Once the dough is ready, pinch out small balls and roll them into thin rotis using a rolling pin. Make sure to roll them as thin as possible for the crispiness that we desire after frying.

Step 2: Frying the Roti
Once your rotis are ready, dust them lightly with some extra whole wheat flour to prevent them from sticking to the rolling pin. Stack the rolled rotis on top of each other as you continue to prepare them.

Heat 1-1/2 cups of sunflower oil in a deep frying pan (kadai) over medium-high heat. You can check if the oil is hot enough by dropping a tiny piece of dough into the oil. If the dough immediately rises and fries, the oil is ready for frying the rotis.

Carefully slide one rolled roti into the hot oil and fry it on medium heat. Be cautious as the oil may splutter. Using a slotted ladle, press gently on the roti to ensure that it fries evenly. Turn the roti to fry the other side until it is golden and crispy. Do not overcook, as we want a crispy texture, not a burnt one.

Once fried, remove the roti and place it on a plate lined with paper napkins to absorb any excess oil. Repeat this process with the remaining dough balls.

Step 3: Preparing the Jaggery Syrup
While the rotis are cooling, let’s prepare the jaggery syrup. In a thick-bottomed saucepan, combine 150 grams of jaggery and 90 ml of water. Heat the mixture over medium heat, allowing the jaggery to melt completely. Once the jaggery has melted, let it simmer for about 7-8 minutes, stirring occasionally.

You can test if the syrup is ready by dipping a ladle into the syrup and quickly pressing your thumb and forefinger together. If the syrup feels sticky, it’s ready. Add 2 teaspoons of red chili powder to the syrup, mixing it well, and then turn off the stove.

Step 4: Assembling the Goan Sweet Churmo
Now that the fried rotis have cooled down, break them into small pieces with your hands. Add these crushed rotis into the jaggery syrup, making sure the syrup coats the pieces evenly. Stir everything gently so the crispy roti pieces soak up the syrup and become flavorful.

Next, grease a plate with a tablespoon of ghee and transfer the churmo mixture onto the plate. Spread it out evenly and let it cool to room temperature.

Step 5: Final Touch and Serving
Once the churmo has cooled down completely, it will be sticky, but that’s the perfect texture. You can store it in an airtight container to keep it fresh for several days.
