Ingredients for Dudhi Dal Gosht

Bottle Gourd (lauki), chopped into cubes 1 kg
Mutton 750 grams
Chana Dal (Bengal Gram Dal) 150 grams
Masoor Dal (Whole) 50 grams
Arhar Dal (Split Toor Dal) 50 grams
Tomato, finely chopped 1
Onions, finely sliced 3
Amchur (Dry Mango Powder) 5 grams
Cinnamon Stick (Dalchini) 2 inches
Bay Leaf (Tej Patta) 2 leaves
Whole Black Peppercorns 6
Cardamom (Elaichi) Pods/Seeds 4
Cumin Seeds (Jeera) 1 teaspoon
Oil As required
Ghee 1 tablespoon
Mint Leaves (Pudina) 2 sprigs
Salt To taste
Ginger Garlic Paste 1 tablespoon
Red Chilli Powder 2 teaspoons
Cumin Powder (Jeera) 1 teaspoon
Coriander Powder (Dhania) 2 teaspoons
Turmeric Powder (Haldi) 1 teaspoon
Fresh Coriander (Dhania) Leaves 5 sprigs, finely chopped for garnish

Instructions

  1. Prepare the Lentils:
    Begin by combining the chana dal, masoor dal, and arhar dal in a pressure cooker. Add water and cook the dal until it becomes soft and mushy. Once done, blend the mixture using a hand blender to get a smooth consistency. Set aside.

  2. Cook the Mutton:
    In a separate pressure cooker, add the mutton pieces along with a pinch of salt and enough water to cover the meat. Cook for about 15 minutes until the mutton becomes tender.

  3. Prepare the Spices and Aromatics:
    In a heavy-bottomed pan, heat oil and ghee. Add the whole spices – bay leaf, black peppercorns, cinnamon stick, and cumin seeds. Sauté these spices for about 30 seconds to release their fragrance.

  4. Sauté the Onions and Spices:
    Add the finely sliced onions to the pan and cook them until they turn golden brown. Be careful not to burn the onions. Once they’re browned, add the ginger garlic paste and cook it for a minute until aromatic. Then, stir in the red chilli powder, cumin powder, coriander powder, turmeric powder, and salt. Let these spices cook together for another 2 minutes.

  5. Add Bottle Gourd and Tomatoes:
    Add the chopped bottle gourd (lauki) and tomatoes to the pan. Mix everything thoroughly and cook for 5-6 minutes, or until the bottle gourd begins to soften but is still firm.

  6. Combine the Ingredients:
    Add the boiled mutton along with the cooked and blended lentils to the pan. Mix well and let everything cook together for about 5 minutes, allowing the flavors to meld.

  7. Add Fresh Mint and Amchur:
    Toss in the fresh mint leaves and the whole amchur (dry mango powder). Add a squeeze of lemon juice to bring in a hint of tanginess. Let it cook for another 5 minutes.

  8. Final Touch:
    Once the dish is fully cooked, turn off the heat. Garnish with freshly chopped coriander leaves.
