Instructions

  1. Prepare the Masala Omelette:

    • In a small bowl, mix together the finely chopped tomatoes, onions, green chilies, coriander leaves, and grated cheese. Set the mixture aside.
    • In a mixing bowl, crack open 2 eggs and add half of the prepared tomato-onion mixture. Season with salt to taste and whisk everything together until well combined.
  2. Cook the Omelette:

    • Heat 1 teaspoon of oil in a pan over medium heat. Once hot, reduce the flame to low and pour the omelette mixture into the pan.
    • Spread the mixture evenly across the pan and cover with a lid. This helps the omelette cook faster.
    • After a minute, check if the omelette has set. You can either flip it to cook on the other side or, if you prefer, fold the omelette in half and cover it again for another 30 seconds to a minute to allow the cheese to melt.
    • Once cooked, turn off the heat and remove the omelette from the pan. Repeat the same process to make the second omelette.
  3. Toast the Pav Buns:

    • Slice the pav buns halfway through horizontally.
    • Spread butter on both sides of the pav buns and toast them on a hot griddle over medium flame. Toast until the buns turn golden brown and crisp.
    • Remove from the griddle and place on a serving plate.
  4. Assemble the Masala Omelette Sliders:

    • Take the toasted pav buns and apply green chutney on one side and tomato ketchup on the other side.
    • Fold each omelette in half and then into a quarter for easy fitting into the pav buns.
    • Place the folded omelette on the bottom half of the bun and close it with the top half.
