Asafoetida (Hing) A pinch
Curry leaves 1 sprig
Coriander (Dhania) leaves A few leaves for garnish

Instructions

  1. Rinse and Cook Dal:
    Begin by rinsing the toor dal (Arhar dal) thoroughly in water. Once rinsed, transfer it to a pressure cooker, add 1 cup of water and turmeric powder. Pressure cook for about 2 whistles. Once done, turn off the flame and allow the pressure to release naturally.

  2. Prepare the Tempering:
    In a separate pan, heat the ghee over medium flame. Once the ghee is hot, add the mustard seeds and allow them to splutter. Follow this by adding the dry red chilies, asafoetida (hing), and curry leaves. Sautรฉ for a minute or two, until the curry leaves splutter and release their fragrance. Turn off the heat.

  3. Mash and Combine:
    After the dal is cooked and the pressure has released, mash the dal well to a smooth consistency. Add salt to taste and mix it thoroughly.

  4. Finish and Serve:
    Pour the tempering (ghee with spices) into the mashed dal and stir to combine. Garnish with fresh coriander leaves.
