Ingredient Quantity
All Purpose Flour (Maida) 335 grams
Buttermilk (or whole milk) 120 ml
Active Dry Yeast 2-1/2 teaspoons
Salt 1 teaspoon
Unsalted Butter, softened 3 tablespoons
Lukewarm Water 60 ml (as needed)
Caster Sugar 50 grams

For the Filling:

Ingredient Quantity
Unsalted Butter, softened 3 tablespoons
Cinnamon Powder (Dalchini) 2 tablespoons
Caster Sugar 50 grams

For the Glaze:

Ingredient Quantity
Milk 3 tablespoons
Icing Sugar 120 grams
Vanilla Extract 1 teaspoon

Preparation Time: 60 minutes

Cooking Time: 30 minutes

Total Time: 90 minutes

Instructions

  1. Prepare the Dough
Begin by gathering and preparing all your ingredients. In a large mixing bowl, combine the all-purpose flour, caster sugar, salt, and active dry yeast. Make a well in the center of the dry mixture. Add the buttermilk, melted butter, and lukewarm water. Use your hands or a spatula to mix everything together, then knead the mixture into a soft dough. If the dough feels a bit sticky, dust it lightly with a little more flour and continue kneading for about 3 to 4 minutes until smooth and elastic.

  2. Rest the Dough
Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 10 minutes. This step helps relax the gluten and makes the dough easier to roll out.

  3. Prepare the Filling
While the dough is resting, prepare the cinnamon sugar filling. In a small bowl, combine the cinnamon powder and caster sugar. Set aside for later use.

  4. Roll the Dough
After the dough has rested, transfer it to a lightly floured surface. Roll it out into a large rectangle, approximately 14×8 inches in size, with a thickness of about 1/4 inch. Spread the softened butter evenly over the entire surface of the dough. Sprinkle the cinnamon sugar mixture generously over the buttered dough, ensuring it covers the entire area.

  5. Shape the Cinnamon Rolls
Carefully roll the dough from the longer side, making sure to roll it tightly but without squishing the dough. Once rolled, cut the dough into 10 to 12 even pieces using a sharp knife or dental floss. Arrange the rolls in a greased 9-inch round cake pan or pie dish.

  6. Let the Rolls Rise
Cover the dish with a clean kitchen towel or plastic wrap and allow the cinnamon rolls to rise in a warm place for about 2 hours. The rolls should nearly double in size, becoming light and puffy.

  7. Bake the Cinnamon Rolls
Preheat your oven to 190°C (375°F). Once the rolls have risen, place the pan in the oven and bake for 25 to 30 minutes, or until the rolls are lightly browned on top. If the tops of the rolls brown too quickly, you can loosely cover them with aluminum foil and continue baking.

  8. Make the Glaze
While the rolls are baking, prepare the icing. In a small bowl, whisk together the icing sugar, milk, and vanilla extract until smooth and creamy.

  9. Glaze the Rolls
Once the cinnamon rolls are done baking and slightly cooled, drizzle the glaze generously over the warm rolls. This will add an extra layer of sweetness and moisture.

  10. Serve and Store
Serve your cinnamon rolls warm, ideally with a cup of coffee or tea. If you have leftovers, cover the rolls (frosted or unfrosted) tightly with plastic wrap and store them in the refrigerator for up to one week. You can reheat them in the microwave or oven for a few seconds to bring back their freshness.

Tips for Success

  • Dough Consistency: The dough should feel soft and slightly tacky but not too sticky. If needed, adjust with a small amount of flour or water until you get the right consistency.
  • Rise Time: Be patient during the rise time. The rolls need to double in size for a soft, fluffy texture.
  • Customizing the Filling: Feel free to add a handful of chopped nuts, raisins, or chocolate chips to the filling for extra flavor and texture.
  • Icing Variations: For a different glaze, you can substitute the milk with heavy cream for a richer texture, or even add a touch of maple syrup or orange zest for a unique twist.

Enjoy your homemade Eggless Buttermilk Cinnamon Rolls—perfect for cozy mornings or as a delicious treat to share with friends and family!
