Instructions

Step 1: Soak the Rice and Lentils

  1. Wash the rice and toor dal thoroughly.
  2. Soak them together in water for at least 30 minutes.

Step 2: Prepare the Batter

  1. Once soaked, drain the rice and dal to ensure no excess water remains.
  2. Add the rice, dal, and the dried red chili to a blender. Grind them into a coarse paste.
    • Tip: It’s fine if small pieces of rice and dal remain; they add texture to the fritters.

Step 3: Mix the Ingredients

  1. Transfer the ground mixture into a mixing bowl.
  2. Add the finely chopped onions, cabbage, coriander leaves, and all the dry spices (red chili powder, turmeric, and asafoetida).
  3. Sprinkle salt to taste.
  4. Mix in the rice flour to absorb any excess moisture, ensuring the batter is easy to shape.

Step 4: Shape the Fritters

  1. Heat oil in a deep frying pan on medium heat.
  2. Grease your palms lightly with oil. Take a small portion of the mixture and shape it into a round ball.
  3. Gently flatten it slightly if desired.

Step 5: Fry the Fritters

  1. Carefully place the shaped fritters into the hot oil.
  2. Fry in batches, ensuring you don’t overcrowd the pan.
  3. Cook on medium heat, flipping occasionally, until they turn golden brown and crispy on all sides.
  4. Remove the fritters and place them on a plate lined with paper towels to absorb excess oil.

Step 6: Serve

  1. Serve the Konkani Style Dangar hot with a side of Dhaniya Pudina Chutney and a steaming cup of Masala Chai for a perfect snack experience.

Tips & Variations

  • Crunch Factor: Leaving tiny bits of rice and dal in the batter enhances the fritters’ crunchiness.
  • Healthier Option: For a lighter version, try air frying or baking the fritters at 180°C (350°F) until crispy.
  • Spice Level: Adjust the red chili powder based on your preference for heat.

Enjoy this classic Konkani snack and bring the flavors of the coast into your home. These cabbage fritters are a surefire way to delight your family and friends!
