For the Potatoes:

Cumin Seeds 1 tsp
Salt To taste
Cumin Powder 1/2 tsp
Garam Masala Powder 1/2 tsp
Chaat Masala Powder 1 tsp
Pomegranate For garnish
Sev For garnish
Lemon Juice 1 tbsp

For the Green Chutney:

Coriander Leaves 1/2 cup
Mint Leaves 1/2 cup
Green Chilies 4
Ginger 1/2 inch, chopped
Lemon Juice 1 tbsp
Peanuts 1 tbsp
Sugar 1 pinch
Salt To taste
Water As needed

Instructions:

  1. Prepare the Potatoes:

    • Start by placing the potatoes in a pressure cooker with enough water to cover them. Seal the cooker and cook on medium heat for about 3 whistles.
    • After 3 whistles, turn off the heat and allow the pressure to release naturally. Once the pressure is fully released, open the cooker, drain the water, and let the potatoes cool completely.
    • Once cooled, peel and chop the potatoes into bite-sized cubes and set aside.
  2. Make the Green Chutney:

    • While the potatoes are cooling, prepare the green chutney. In a mixer grinder, combine coriander leaves, mint leaves, green chilies, ginger, lemon juice, peanuts, sugar, and a pinch of salt.
    • Add a little water and blend everything into a smooth chutney. Set it aside.
  3. Cook the Potatoes:

    • Heat some oil in a pan over medium heat. Add cumin seeds to the hot oil and let them crackle.
    • Once the cumin seeds have cracked, add the chopped boiled potatoes. Stir in some salt and cook the potatoes until they turn golden brown and slightly crispy on the outside.
    • Sprinkle in cumin powder and garam masala powder, mixing well to ensure the potatoes are evenly coated with the spices.
    • Turn off the heat and let the potatoes cool slightly.
  4. Assemble the Chaat:

    • Once the potatoes have cooled, transfer them to a mixing bowl. Add the prepared green chutney to the potatoes and toss gently to combine.
    • Sprinkle chaat masala powder over the mixture and toss again to evenly coat the potatoes with the chutney and spices.
  5. Garnish and Serve:

    • Transfer the chaat to a serving bowl. Garnish with pomegranate seeds and sev for a crunch.
    • For an added zing, squeeze some fresh lemon juice on top.
