Instructions

  1. Grind the Red Chillies and Garlic

  2. Prepare the Tempering
    In a small tadka pan, heat the oil over medium heat. Once the oil is hot, add the mustard seeds. Allow them to splutter for a few seconds, releasing their flavor into the oil. Once they have spluttered, remove the pan from the heat and immediately add the asafoetida (hing). Stir briefly to combine.

  3. Combine the Paste and Tempering
    Pour the hot tempering over the ground red chilli paste. Mix well to ensure the tempering is evenly incorporated into the chutney. This adds depth of flavor and a wonderful aroma to the Thecha.

  4. Storage and Serving
