For Making the Chaat:

Instructions:

Step 1: Preparing the Canape Papdi

To begin, we’ll start with the foundation of the dish โ€” the canape papdi. Sift the gram flour (besan), instant oats flour, and whole wheat flour into a bowl. Add kashmiri red chili powder, salt, oil, and cooking soda. Mix the dry ingredients well, ensuring they form a crumbly texture.

Gradually add water to the flour mixture, a little at a time, until you achieve a soft yet stiff dough. Once mixed, cover the dough with a damp cloth and allow it to rest for 30 minutes. This resting period is crucial for the dough to relax and become easier to work with.

After resting, knead the dough for a few more minutes to make it smooth and pliable. Pinch off small portions of dough, rolling each into a ball. On a clean surface, lightly dust with whole wheat flour and roll each dough ball into a thin sheet.
