Grilled Spicy Potato Sandwich

Ingredients:

  • For the Sandwich:
    • 12 slices Whole Wheat Brown Bread
    • 4 Tomatoes, thinly sliced
    • 2 Onions, thinly sliced into rings
  • For the Spicy Potato Filling:
    • 2 cups Potatoes (Aloo), boiled and coarsely mashed
    • 1 Onion, roughly chopped
    • 1 teaspoon Ginger, grated
    • 2 Green Chilies, finely chopped
    • 1/4 teaspoon Turmeric Powder (Haldi)
    • 6 Curry Leaves, finely chopped
    • Coriander (Dhania) Leaves, finely chopped
    • Salt, to taste
  • For Seasoning the Potatoes:
    • 1 tablespoon Oil
    • 1 teaspoon Mustard Seeds (Rai/ Kadugu)
    • 1 teaspoon White Urad Dal (Split)
    • 1 teaspoon Chana Dal (Bengal Gram Dal)
    • 1/4 teaspoon Asafoetida (Hing)

Preparation Time: 15 minutes

Cooking Time: 15 minutes

Instructions:

  1. Prepare the Potato Filling:
    Heat the oil in a heavy-bottomed pan. Add the mustard seeds, urad dal, and chana dal, and roast them until they turn light brown.
    Next, add the ginger, onions, curry leaves, green chilies, and asafoetida. Sauté for a few minutes until the onions turn soft.
    Add the turmeric powder and salt. Stir in the mashed potatoes and mix well. Cover the pan and let it cook on low heat for a few minutes. Once the potatoes are cooked and the flavors meld, turn off the heat. The filling is now ready!

  2. Assemble the Sandwich:
    Lay a slice of bread on a flat surface. Spoon a generous amount of the prepared potato filling onto the bread slice and spread it evenly.
    Arrange one or two slices of tomato and a few onion rings over the potato filling. Top it with another slice of bread. Gently press the sandwich to hold the filling in place.

  3. Grill the Sandwich:
    Preheat your grill pan or sandwich maker. Lightly brush the sandwich with softened butter or a bit of cooking oil.
    Place the sandwich in the preheated grill pan or sandwich maker. Press down gently with a spatula to ensure even grilling. Grill the sandwich until it is crisp and lightly browned on both sides.

  4. Serve:
    Serve the Grilled Spicy Potato Sandwich hot, paired with a steaming cup of Adrak Chai (Ginger Tea) and a fresh Fruit Bowl for a perfect breakfast or snack.
