Achari Chicken Masala Pasta

This fusion recipe combines the richness of Italian pasta with the tangy, spicy kick of Indian achari sauce. The pasta is tossed in a flavorful achari gravy made from Nutralite Achari mayo, delivering a mouthwatering blend of two beloved cuisines.

Ingredients:

  • 1 teaspoon Nutralite Garlic & Oregano Spread
  • 6 cloves Garlic, finely chopped
  • 2 Onions, thinly sliced
  • 3 Dry Red Chillies
  • 2 Chicken Breasts, cut into strips
  • Salt, to taste
  • 3 tablespoons Achari Mayo
  • 1/2 cup Homemade Tomato Puree
  • 3/4 cup Milk
  • 2 cups Durum Wheat Penne Pasta

Preparation Time: 10 minutes

Cooking Time: 30 minutes

Total Time: 40 minutes


Instructions:

  1. Cook the Pasta:

    • Bring a large pot of water to a boil. Add a teaspoon of salt.
    • Add the Durum Wheat Penne Pasta to the boiling water and cook for 12-15 minutes, or until al dente.
    • Drain the pasta and run it under cold water to stop the cooking process.
    • Drizzle some oil over the pasta to prevent it from sticking together. Set aside.
  2. Prepare the Achari Masala Base:

    • In a pan, heat the Nutralite Garlic & Oregano Spread over medium heat. Add the dry red chillies and sauté for a few seconds.
    • Add the onions and garlic, cooking until they turn golden brown.
    • Turn off the heat and let the mixture cool down.
    • Once cooled, transfer the mixture to a mixer and blend into a smooth paste. Set aside.
  3. Cook the Chicken:

    • In a kadai or deep pan, heat a teaspoon of Nutralite Garlic & Oregano Spread over medium heat.
    • Add the chicken strips and cook for 6-8 minutes, until nearly cooked through.
    • Add the homemade tomato puree and stir until it starts to bubble.
    • Add the freshly ground onion paste and Nutralite Achari Mayo. Mix well.
    • Pour in the milk and bring the mixture to a boil. Stir occasionally.
  4. Combine Pasta and Sauce:

    • Once the achari chicken sauce has come to a boil, add the cooked pasta to the pan and mix well.
    • Let it cook for an additional 2-3 minutes to allow the flavors to combine.
    • Taste and adjust salt and spices as needed.
  5. Serve:

    • Turn off the heat and serve the Achari Chicken Masala Pasta hot.
    • For the complete meal, pair it with Cheese Garlic Bread, Blueberry and Lemon Iced Tea, and finish with a delicious Banoffee Pie for dessert.
