Ingredients:
For Khatta Pudla (Savory Pancake):
- 1-1/2 cups Gram flour (besan)
- 1/2 cup Tomatoes, very finely chopped
- 1 Green Chilli, finely chopped
- 1/4 tsp Turmeric powder (Haldi)
- 1/2 tsp Red Chilli powder
- 1 pinch Asafoetida (hing)
- 1/4 tsp Amchur (Dry Mango Powder)
- Salt, to taste
- 1 cup Water
- Oil, for drizzling while cooking
For Meetha Pudla (Sweet Pancake):
- 1 cup Jaggery, grated
- 1 cup Whole Wheat Flour
- 1/3 cup Water (adjust for consistency)
- Oil, for drizzling
To Serve:
- Roasted tomato pasta sauce, as needed
- Green Chutney (Coriander & Mint), as needed
- Coriander (Dhania) leaves, a few

Prepare the Khatta Pudla (Savory Version):
In a mixing bowl, combine the gram flour, chopped tomatoes, green chili, turmeric powder, red chili powder, asafoetida, amchur powder, and salt. Gradually add water to form a smooth batter. The batter should be thick yet spreadable. -
Prepare the Meetha Pudla (Sweet Version):
In another bowl, mix the jaggery and whole wheat flour. Add enough water to make a smooth, thick batter. Adjust the water quantity for desired consistency. -
Cook the Khatta Pudla:
Heat a non-stick skillet or griddle over medium heat. Drizzle a little oil on the surface. Pour a ladle of the khatta pudla batter onto the griddle and spread it into a circular shape. Cook for 2-3 minutes on each side until golden brown and cooked through. Set aside. -
Cook the Meetha Pudla:
In the same griddle, drizzle oil and pour the meetha pudla batter. Cook for 2-3 minutes on each side until slightly crisp and golden brown. -
Serve:
Place the savory and sweet pudlas on a serving plate. Drizzle with roasted tomato pasta sauce and green chutney. Garnish with fresh coriander leaves.
