Description:
Dudhi Dhokli Nu Shaak is a flavorful and spicy gram flour-based curry from the Kathiyawadi region of Gujarat. The addition of bottle gourd (lauki) makes this dish stand out, adding a unique taste to the traditional dhokli nu shaak. The combination of tender steamed dumplings and rich curry makes it a delightful dish perfect for lunch.


Ingredients

For Dhokli (Steamed Dumplings):

  • 1 cup Bottle gourd (lauki), grated
  • 1 cup Gram flour (besan)
  • Salt, to taste
  • A pinch of Turmeric powder (Haldi)
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Ajwain (Carom seeds)
  • 1 tablespoon Coriander leaves, chopped
  • A pinch of Enos Fruit Salt
  • 1 ½ cup Water

For Curry:

  • 1 tablespoon Oil
  • A few Curry leaves
  • 1 teaspoon Cumin seeds (Jeera)
  • ½ teaspoon Mustard seeds (Rai/ Kadugu)
  • A pinch of Asafoetida (hing)
  • 1 teaspoon Ginger garlic paste
  • 1 Tomato, chopped
  • Salt, to taste
  • ½ teaspoon Garam masala powder
  • ½ teaspoon Red Chilli powder
  • 1 tablespoon Gram flour (besan)
  • 1 cup Buttermilk
  • 1 tablespoon Coriander leaves, chopped (for garnish)

Preparation Time: 15 minutes

Cooking Time: 20 minutes


Instructions

  1. Prepare the Dhokli (Steamed Dumplings):

    • In a mixing bowl, combine grated bottle gourd, chopped coriander leaves, gram flour, salt, red chilli powder, turmeric powder, and carom seeds.
    • Add water gradually to make a thick batter.
    • Add a pinch of fruit salt to the batter and mix well.
    • Preheat a steamer filled halfway with water.
    • Grease a dhokla plate and transfer the batter onto it.
    • Steam cook the batter for 10-15 minutes, then allow it to cool down.
    • Once cooled, cut into small pieces.
  2. Shallow Fry the Dhokli:

    • Heat oil in a shallow frying pan and fry the dhokli pieces on both sides until lightly golden. Set them aside.
  3. Prepare the Curry:

    • In a bowl, mix gram flour with buttermilk and set it aside.
    • Heat oil in a heavy-bottomed pan over medium heat.
    • Add mustard seeds, and once they splutter, add cumin seeds, asafoetida, ginger garlic paste, and curry leaves. Sauté for about a minute.
    • Add the chopped tomatoes and cook until they become soft and mushy.
    • Once the tomatoes are mushy, add the gram flour buttermilk mixture, salt, red chilli powder, and garam masala powder. Mix everything together and cook on low heat until the curry begins to boil (about 2-3 minutes).
  4. Combine the Dhokli with the Curry:

    • Add the shallow-fried dhokli pieces to the boiling curry. Mix gently and allow it to simmer for another 3-4 minutes.
    • Switch off the heat and garnish with freshly chopped coriander leaves.
  5. Serve:

    • Serve your Dudhi Dhokli Nu Shaak hot with steamed rice for a comforting lunch. You can also enjoy it with a side of Masala Khichiya Churi for extra flavor.
