Chiba Dhokli is a traditional Gujarati snack from the Kutch region, which has become less popular in recent years. This delicious dish is made from gram flour (besan) and has a taste similar to Khandvi but is unique to Kutch. Perfect for a light snack, Chiba Dhokli brings authentic flavors to your table.

Ingredients:

  • 1/2 cup Gram flour (besan)
  • 1 teaspoon Green chillies (finely chopped)
  • 2 teaspoons Kasuri methi (dried fenugreek leaves)
  • 1/2 teaspoon Asafoetida (hing)
  • 1 pinch Turmeric powder (haldi)
  • 2 teaspoons Caster sugar
  • Salt to taste
  • 1 teaspoon Lemon juice
  • 1 teaspoon Oil (for the batter)

For Tempering:

  • 2 teaspoons Oil
  • 2 teaspoons Mustard seeds (rai/kadugu)
  • 2 teaspoons Sesame seeds (til seeds)
  • 1 tablespoon Pickle masala (optional)

Instructions:

  1. Prepare the Batter:
    Sift the gram flour (besan) in a bowl. Add the chopped green chillies, kasuri methi, hing, turmeric powder, salt, caster sugar, lemon juice, and 1 teaspoon of oil. Gradually add a little water to form a thick batter with a no-dropping consistency. Mix thoroughly.

  2. Steam the Dhokli:
    Heat sufficient water in a saucepan until it begins to boil. Grease a plate that fits well over the saucepan. Spread the batter evenly on the plate with your hands or a brush, creating a thin layer.

  3. Cook with Steam:
    Place the plate of batter upside down on the saucepan, ensuring that the batter does not touch the boiling water directly. Steam for about 3-4 minutes, allowing the dhokli to cook through.

  4. Cut the Dhokli:
    Once the dhokli is steamed and slightly cooled, brush a bit of oil on the plate. Use a knife or the back of a spoon to cut the dhokli into even strips.

  5. Temper the Dhokli:
    In a small pan, heat 2 teaspoons of oil. Add mustard seeds and sesame seeds, letting them crackle. Optionally, add pickle masala for an extra burst of flavor. Pour the tempering over the cut dhokli strips.

  6. Serve:
    Place the dhokli on a serving plate. Serve warm as a snack or appetizer, and enjoy!
