Ingredients:

  • 8 green chillies
  • 2 large potatoes, boiled and mashed
  • 1 cup gram flour
  • 1 tsp celery
  • 1 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • 1/2 tsp chaat masala powder
  • 1/4 tsp dried mango powder
  • 1/2 tsp black salt or rock salt
  • 1/2 tsp cumin powder
  • 2 tbsp coriander leaves, finely chopped
  • 1 green chilli, finely chopped
  • 1 tsp chaat masala powder, for garnish
  • Salt, to taste
  • Oil, as needed

Preparation Time: 15 minutes
Cook Time: 30 minutes

Instructions:

  1. Wash the green chillies thoroughly, make a slit along the length of each chilli, and carefully remove the seeds. Set them aside.
  2. Pressure cook the potatoes with water until 3 whistles. Once the pressure is released naturally, peel and mash the potatoes. Set aside.
  3. In a bowl, mix the gram flour, red chilli powder, celery, salt, and enough water to make a smooth batter. Set aside.
  4. In another bowl, mix the mashed potatoes with red chilli powder, cumin powder, garam masala powder, dried mango powder, black salt, coriander leaves, and chopped green chillies.
  5. Stuff the prepared potato mixture into the green chillies, ensuring each chilli is filled well.
  6. Heat oil in a pan. Dip each stuffed chilli into the gram flour batter, coating it evenly, and then carefully fry it in hot oil. Fry the chillies one by one, ensuring they are cooked until golden brown and crispy on all sides.
  7. Once fried, remove the chillies from the oil and sprinkle them with chaat masala powder for added flavor.
  8. Serve your Rajasthani Mirchi Bada hot, paired with coriander mint chutney and masala tea for the ultimate snack experience.
