Eggless Date & Walnut Oatmeal Cake

Ingredients:

  • 1 ¼ cups All Purpose Flour (Maida)
  • 1 ½ teaspoons Baking Powder
  • ¼ teaspoon Salt
  • ½ cup Brown Sugar (Demerara Sugar)
  • ½ cup Nutralite Classic Spread
  • ¾ cup Rolled Oats
  • 1 cup Hot Water
  • 1 cup Dates, pitted and finely chopped
  • 1 cup Walnuts, chopped
  • 1 tablespoon Flax Seed Powder (Flax Meal)
  • 3 tablespoons Chilled Water

Preparation Time: 19 minutes

Cook Time: 70 minutes

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease a loaf pan or springform pan with Nutralite Classic Spread and dust with flour. Set aside.

  2. Soak the chopped dates in the hot water for about 15 minutes until the water is absorbed and the dates become soft.

  3. In a large mixing bowl, combine the flour, baking powder, and salt.

  4. In another bowl, beat the brown sugar and Nutralite Classic Spread until smooth and creamy. Add the flaxseed powder and chilled water, then mix well.

  5. Stir in the soaked dates and walnuts to the sugar mixture.

  6. Gradually add the dry ingredients into the wet mixture, alternating with the rolled oats. Mix well until the batter is smooth.

  7. Pour the batter into the prepared loaf or springform pan.

  8. Bake in the preheated oven for about 70 minutes or until a toothpick inserted into the center comes out clean.

  9. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
