Cuisine: Mexican
Course: Lunch

Ingredients:

  • 4 large Tortillas
  • 1 teaspoon Extra Virgin Olive Oil
  • 4 Potatoes (Aloo), half-boiled and cut into wedges
  • 3 cloves Garlic, finely chopped
  • Dried Oregano, for seasoning
  • 1 Green Bell Pepper (Capsicum), cut into thin strips
  • 1 Onion, thinly sliced
  • 4 tablespoons Britannia Cheese Spread – Asli Pepper
  • 2 teaspoons Sweet and Spicy Red Chilli Sauce (Tomato Chilli Sauce)
  • Salt, to taste

Preparation Time: 10 minutes
Cook Time: 30 minutes

Instructions:

  1. Prep the Ingredients:
Begin by prepping all the ingredients. It helps to have your tortillas ready and your vegetables chopped so you can assemble the wrap quickly.

  2. Roast the Potatoes:
Heat the oil in a wok over medium heat. Add the garlic and sauté for a few seconds until fragrant. Add the bell pepper strips and cook for 2-3 minutes until softened. Add the par-boiled potato wedges and season with salt. Sauté on medium-high heat until the potatoes are golden brown and crispy, around 10-12 minutes. Stir in the oregano and sweet and spicy red chilli sauce, then turn off the heat.

  3. Toast the Tortillas:
In a separate pan, lightly toast the tortillas with a bit of oil until they are warm and slightly crisp. This adds extra flavor and crunch to the wrap.

  4. Assemble the Wraps:
On a clean surface, place a toasted tortilla. Spread a tablespoon of the Asli Pepper cheese spread evenly across the surface. The cheese spread is creamy and rich, making it an excellent alternative to butter. Add a generous portion of the roasted potato mixture, followed by the bell peppers and onions. Roll up the tortilla tightly, ensuring the filling stays in place.

  5. Serve:
Repeat the process with the remaining ingredients to make a total of four wraps. Wrap each roll in parchment paper for a neat presentation, and serve immediately.

Serving Suggestions:
Enjoy the Roasted Potato Wrap/Roll as a tea-time snack with Adrak Chai, a quick after-school snack, or even as a lunchbox meal for kids. It’s also great for a light weeknight dinner.

Enjoy your delicious and fulfilling wrap!
