Ingredients:
- 4 whole eggs, beaten
- 1/3 cup Parmesan cheese, grated
- 1/2 cup Provolone cheese, grated
- 1/2 teaspoon fresh thyme leaves
- 1/4 teaspoon dried oregano
- 1 leek (white and green parts), chopped small
- 1 tablespoon extra virgin olive oil
- 1 clove garlic, minced
- 1 onion, finely chopped
- 1/4 cup ricotta cheese
- 1/2 cup kale, chopped (or spinach)
- Salt and pepper to taste

Instructions:
- In a medium bowl, whisk together the eggs, Parmesan cheese, Provolone cheese, thyme, oregano, salt, and pepper until the mixture is fluffy and well-combined. Set aside.
- Heat the olive oil in a cast-iron skillet over medium heat. Add the minced garlic and chopped onions, sautéing until the onions turn golden brown and develop a caramelized aroma.
- Add the chopped leek (white part) to the skillet and cook for about 5 minutes until it softens.
- Once the leeks are tender, add the leek greens and kale (or spinach). Season with salt and cook until the greens soften and most of the moisture evaporates.
- Pour the egg and cheese mixture over the vegetables, swirling the pan to spread the mixture evenly across the base.
- Cook the frittata for 7 minutes, or until the edges are set but the top remains slightly soft.
- Add the ricotta cheese on top, cover the skillet with a lid, and cook until the frittata is puffed up and the eggs are fully cooked through.
- Turn off the heat and allow the frittata to rest for a minute before serving.
