Ingredients:

  • 4 whole eggs, beaten
  • 1/3 cup Parmesan cheese, grated
  • 1/2 cup Provolone cheese, grated
  • 1/2 teaspoon fresh thyme leaves
  • 1/4 teaspoon dried oregano
  • 1 leek (white and green parts), chopped small
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, minced
  • 1 onion, finely chopped
  • 1/4 cup ricotta cheese
  • 1/2 cup kale, chopped (or spinach)
  • Salt and pepper to taste

Preparation Time: 15 minutes
Cooking Time: 20 minutes

Instructions:

  1. In a medium bowl, whisk together the eggs, Parmesan cheese, Provolone cheese, thyme, oregano, salt, and pepper until the mixture is fluffy and well-combined. Set aside.
  2. Heat the olive oil in a cast-iron skillet over medium heat. Add the minced garlic and chopped onions, sautéing until the onions turn golden brown and develop a caramelized aroma.
  3. Add the chopped leek (white part) to the skillet and cook for about 5 minutes until it softens.
  4. Once the leeks are tender, add the leek greens and kale (or spinach). Season with salt and cook until the greens soften and most of the moisture evaporates.
  5. Pour the egg and cheese mixture over the vegetables, swirling the pan to spread the mixture evenly across the base.
  6. Cook the frittata for 7 minutes, or until the edges are set but the top remains slightly soft.
  7. Add the ricotta cheese on top, cover the skillet with a lid, and cook until the frittata is puffed up and the eggs are fully cooked through.
  8. Turn off the heat and allow the frittata to rest for a minute before serving.

Serve the Kale & Leeks Frittata with buttered toast, a warm cup of mulled apple juice, and fresh fruit for a wholesome breakfast. Enjoy!
