Soft Millet Taco Recipe Topped with Hummus & Veggies

This delicious and diabetic-friendly breakfast recipe features soft millet tacos made from a blend of jowar (sorghum), bajra (pearl millet), and whole wheat flour. Topped with a flavorful combination of hummus, sautéed vegetables, and boiled eggs, this dish is a nutritious and satisfying start to your day.

Ingredients:

For the Soft Tacos:

  • 1/2 cup Jowar Flour (Sorghum)
  • 1/2 cup Bajra Flour (Pearl Millet)
  • 3/4 cup Whole Wheat Flour
  • Salt, to taste
  • Oil

For the Topping:

  • 1/2 cup Homemade Hummus
  • 1 tablespoon Butter (Salted)
  • 1 cup Broccoli, cut into small florets
  • 1 cup Cherry Tomatoes, slit into halves
  • 1 Onion, sliced
  • 4 cloves Garlic, finely chopped
  • 1 teaspoon Sugar
  • 1 teaspoon Black Pepper Powder
  • 1 teaspoon Cumin Powder (Jeera)
  • Salt, to taste

Preparation Time: 20 minutes

Cooking Time: 40 minutes

Instructions:

  1. Prepare the Soft Tacos:

    • In a large bowl, combine the jowar, bajra, and whole wheat flours. Add salt to taste.
    • Gradually add water and knead the mixture into a soft dough. Once the dough is ready, cover it with a cloth and let it rest while you prepare the toppings.
  2. Prepare the Hummus:

    • For the hummus topping, you can use your preferred homemade hummus recipe. You can refer to the Classic Homemade Hummus Recipe with Lemon and Coriander for guidance.
  3. Prepare the Boiled Eggs:

    • Boil the eggs, peel them, and cut them into quarters. Set aside for later.
  4. Make the Topping:

    • In a skillet, melt butter over medium heat. Add the garlic and sauté until soft.
    • Add the sliced onion and cook until golden brown. To enhance caramelization, add a teaspoon of sugar.
    • Stir in the broccoli florets and cherry tomatoes. Season with salt, black pepper, and cumin powder. Cover and cook for 3-4 minutes, or until the broccoli is tender and bright green.
    • Turn off the heat and set the vegetable mixture aside.
  5. Make the Soft Tacos:

    • Divide the rested dough into medium-sized balls. Dust each ball with whole wheat flour and gently roll it out into a round shape.
    • Preheat a skillet over medium heat. Cook each rolled taco on both sides until light brown spots appear. Ensure they become lightly crisp but remain soft in texture. Set aside.
  6. Assemble the Tacos:

    • Take a soft taco and spread a tablespoon of hummus evenly on the surface.
    • Top with sautéed vegetables (broccoli and cherry tomatoes), and place the boiled egg quarters on top.
    • Sprinkle black pepper powder over the taco and serve.
