Goan Style Frango Vera (Chicken Vera)

Ingredients:

  • 2 Drumsticks
  • 1 teaspoon Turmeric powder (Haldi)
  • Salt, to taste
  • Oil

For the Recheado Masala:

  • 10 Dry Red Chillies
  • 3 cloves Garlic
  • 2 Cloves (Laung)
  • 1-inch Cinnamon Stick (Dalchini)
  • 1 teaspoon Whole Black Peppercorns
  • 1 Onion, chopped
  • 18 grams Tamarind Paste

Preparation Time: 60 minutes

Cooking Time: 45 minutes

Instructions:

  1. Prepare the Recheado Masala:
    Begin by grinding the ingredients for the Recheado masala. In a mixer or blender, combine dry red chillies, garlic, cloves, cinnamon stick, whole black peppercorns, chopped onion, and tamarind paste. Add a little water and blend until smooth. Set the masala paste aside in a bowl.

  2. Marinate the Chicken:
    Clean the chicken drumsticks thoroughly. Make small scores on the drumsticks and apply the Recheado masala paste generously. Sprinkle turmeric powder and salt, and coat the chicken evenly. Allow it to marinate for at least 1 hour.

  3. Cook the Chicken:
    Heat oil in a flat skillet over medium flame. Once the oil is hot, place the marinated drumsticks in the skillet. Sizzle them on both sides, cooking the chicken slowly over low heat. Turn the chicken occasionally to ensure it cooks evenly on all sides. The drumsticks should take about 12-15 minutes to cook thoroughly, resulting in a nicely roasted chicken.

  4. Serve:
    Serve your Goan Style Frango Vera hot as an appetizer, paired with a Goan fish curry and steamed rice to complete the meal. Enjoy this flavorful, spicy dish!
