Soulful Chicken Soup Recipe

Ingredients:

  • 1 Chicken (drumstick, cut into small pieces)
  • 1 Onion (thinly sliced)
  • 1 Carrot (chopped)
  • 4 Garlic Cloves (crushed)
  • 1-inch piece of Ginger (chopped)
  • 1 tsp Whole Black Pepper
  • Salt to taste

For Soup:

  • 2 Stems Green Onions (chopped)
  • ¼ cup Sweet Corn
  • 1 tsp Cream
  • Salt to taste
  • Black Pepper Powder to taste

Preparation Time: 10 mins

Cook Time: 25 mins

Instructions:

  1. First, wash the chicken thoroughly and set aside.
  2. In a pressure cooker, add the chicken, onion, carrot, black pepper, garlic, ginger, and 2 cups of water. Cook for 3 whistles.
  3. Turn off the heat and let the pressure release naturally. Once the cooker is open, strain the stock.
  4. Pour the stock back into a saucepan and turn on the heat.
  5. After 1 minute, add the sweet corn, green onions, boiled chicken, and cream. Let it boil.
  6. Once it comes to a boil, add salt and black pepper powder. Stir well.
  7. When the vegetables are tender, turn off the heat and serve.

Serve this Soulful Chicken Soup with Sri Lankan curry and Tawa paratha for a delicious dinner.
