Soulful Chicken Soup Recipe

Ingredients:
- 1 Chicken (drumstick, cut into small pieces)
- 1 Onion (thinly sliced)
- 1 Carrot (chopped)
- 4 Garlic Cloves (crushed)
- 1-inch piece of Ginger (chopped)
- 1 tsp Whole Black Pepper
- Salt to taste
For Soup:
- 2 Stems Green Onions (chopped)
- ¼ cup Sweet Corn
- 1 tsp Cream
- Salt to taste
- Black Pepper Powder to taste
Preparation Time: 10 mins
Cook Time: 25 mins
Instructions:
- First, wash the chicken thoroughly and set aside.
- In a pressure cooker, add the chicken, onion, carrot, black pepper, garlic, ginger, and 2 cups of water. Cook for 3 whistles.
- Turn off the heat and let the pressure release naturally. Once the cooker is open, strain the stock.
- Pour the stock back into a saucepan and turn on the heat.
- After 1 minute, add the sweet corn, green onions, boiled chicken, and cream. Let it boil.
- Once it comes to a boil, add salt and black pepper powder. Stir well.
- When the vegetables are tender, turn off the heat and serve.
Serve this Soulful Chicken Soup with Sri Lankan curry and Tawa paratha for a delicious dinner.
