Rayalseema Style Borugula Upma is a traditional and flavorful breakfast dish from the Rayalaseema region of Andhra Pradesh. Made with puffed rice and a combination of spices and roasted ingredients, this dish offers a simple yet delicious start to your day.

Ingredients:

  • 2 cups Puffed rice
  • 1 Onion, chopped
  • 1 Green Chilli, chopped
  • 2 tbsp Roasted Peanuts (Moongphali)
  • 1 tbsp Lemon juice
  • ½ tsp Turmeric powder (Haldi)
  • Salt, to taste
  • 2 sprigs Coriander (Dhania) leaves, chopped

Ingredients to grind:

  • 2 tbsp Desiccated Coconut
  • 2 tbsp Roasted Gram Dal (Pottukadalai), roasted

For tempering:

  • ½ tsp Mustard seeds (Rai/Kadugu)
  • 1 tsp White Urad Dal (split)
  • ½ tsp Cumin seeds (Jeera)
  • 1 sprig Curry leaves
  • Oil, for cooking

Preparation Time: 5 mins
Cooking Time: 15 mins
Total Time: 20 mins
Serves: 2-3

Instructions:

  1. Start by grinding the roasted gram dal and desiccated coconut into a coarse powder using a mixer grinder. Set it aside.
  2. Heat oil in a kadai (wok) on medium heat. Add mustard seeds, urad dal, and cumin seeds. Let them splutter for about 10 seconds.
  3. Add curry leaves and sauté until they crackle.
  4. Add the chopped onion and green chilli, and sauté until the onions turn light brown.
  5. Stir in the turmeric powder, and then turn off the heat.
  6. Add the puffed rice along with the ground chickpea-coconut mixture and roasted peanuts.
  7. Drizzle lemon juice over the mixture and adjust the salt to taste.
  8. Mix everything together well, and garnish with freshly chopped coriander leaves.

Serve the Rayalseema Style Borugula Upma hot, paired with a cup of chai and a crispy vada for a satisfying morning meal. Enjoy the authentic flavors of Rayalaseema!
