Coconut Ladoo Stuffed with Pistachios

Ingredients:

  • 1 cup Condensed Milk
  • 1 cup Dessicated Coconut, plus extra for rolling
  • 1 tablespoon Rose Water (optional)
  • 2 tablespoons Ground Pistachios
  • Ghee (to grease palms when rolling ladoos)

Preparation Time: 10 minutes
Cooking Time: 30 minutes

Instructions:

  1. Start by grinding the pistachios into a fine powder and set them aside for later use.

  2. In a non-stick pan, add the condensed milk and desiccated coconut. Set the heat to low and cook, stirring continuously.

  3. After about 5 minutes, or sooner depending on the heat, the mixture will begin to thicken, resembling a dough-like consistency. If you’re using rose water, now is the time to add it.

  4. Once the mixture has reached a dough-like consistency, take it off the heat and let it cool slightly to make it easier to handle with your hands.

  5. Grease your palms with ghee or butter. Take a lemon-sized portion of the coconut dough and press it into a rough round shape.

  6. Gently flatten the dough ball and make a small depression in the center using your thumb. Add a teaspoon of the ground pistachios into the center.

  7. Roll the ladoo again, carefully sealing the pistachio inside the coconut dough, and shape it into a perfect round.

  8. Roll the ladoo in additional desiccated coconut and set it aside. Repeat until all the dough is used up.

  9. Serve the Coconut Ladoo Stuffed with Pistachios immediately, or store them in an airtight container in the refrigerator for 2-3 days.

Serving Suggestion:
These ladoos make a wonderful treat when served alongside Sabudana Khatti Meethi Namkeen during the festive season, or as a delightful evening snack paired with Masala Chai.
