Kashmiri Style Dum Monji (Knol Khol in Yogurt)

- 4 tbsp Mustard oil
- 2 tbsp Ginger garlic paste
- 2 tsp Kashmiri red chili powder
- 2 tsp Fennel powder
- 1 tsp Turmeric powder (Haldi)
- 1 tsp Dry ginger powder
- 1/2 tsp Asafoetida (hing)
- 1-2 tsp Salt, as needed
- 4 Cloves (Laung)
- 2 Black cardamom (Badi Elaichi), coarsely ground
- 1/4 tsp Cumin seeds (Jeera)
- 4 tsp Curd (Dahi/Yogurt)

Prep the Knol Khol: Wash and peel the knol khol, then cut it into cubes. Chop the leaves as well.

Cook the Spices: Heat mustard oil in a pressure cooker. Add asafoetida, cumin seeds, cloves, and ground black cardamom. Let them crackle. Then, add the ginger garlic paste and sauté for 2 minutes.

Add the Spices: Stir in the Kashmiri red chili powder, fennel powder, dry ginger powder, turmeric, and a little water. Fry the masala for 1-2 minutes to release the flavors.

Add the Knol Khol: Add the chopped knol khol and leaves to the pot. Stir and fry for 2-3 minutes to combine with the masala.

Incorporate the Yogurt: Add the whisked curd and mix well. Adjust the oil if necessary, and add salt. Cook until the oil begins to separate from the sides of the mixture.

Pressure Cook: Add about 1/2 cup of water to the cooker, stir well, and pressure cook for 2-3 whistles.
