Banarasi Style Tomato Chaat (Tamatar Chaat Banarasi Style)

Ingredients:
- 2 boiled potatoes, mashed
- 1 tsp red chili powder
- 4 ripe tomatoes
- 1 tsp black salt (or rock salt)
- 1 tsp cumin powder
- 1 tsp black pepper powder
- 2 tbsp tomato ketchup
- 1 tbsp sugar
- 1 tsp garam masala powder
- 1 onion, finely chopped
- 3 green chillies, chopped
- Fresh coriander leaves, chopped
- Puffed rice (namkeen), as needed
- Oil, as required for frying

Instructions:
- Begin by placing the potatoes in a pressure cooker with enough water and a pinch of salt. Close the lid and cook for 3 whistles. Once cooked, peel and mash the potatoes in a bowl.
- To the mashed potatoes, add cumin powder, red chili powder, garam masala powder, black pepper, and black salt. Mix well to combine.
- Cut the tops off the tomatoes and carefully scoop out the pulp using a spoon. Fill each tomato with the prepared potato masala.
- Heat 2-3 tablespoons of oil in a pan. Once the oil is hot, carefully place the stuffed tomatoes with the masala-filled side down in the pan. Cover the pan and cook for 10-15 minutes until the tomatoes are tender and slightly cooked.
- Once cooked, turn off the heat and transfer the tomatoes to a mixer grinder. Grind them to a smooth paste.
- In a separate pan, heat a bit more oil and add the tomato paste, salt, sugar, and tomato ketchup. Cook for 10-12 minutes until it thickens and becomes fragrant.
- Transfer the cooked mixture into a bowl and garnish with finely chopped onion, green chillies, fresh coriander leaves, and puffed rice.
- Serve your Banarasi Style Tomato Chaat as a savory evening snack, paired with masala tea.
