Carrots Dill and Peanut Sadam – South Indian Style Stir-Fried Rice

Ingredients:
- 2 cups Rice (fully cooked)
- 1 tablespoon Sesame (Gingelly) Oil
- 1 teaspoon Mustard seeds (Rai/ Kadugu)
- Pinch of Asafoetida (hing)
- 2 sprigs Curry leaves
- 1 teaspoon White Urad Dal (Split)
- 1 teaspoon Chana Dal (Bengal Gram Dal)
- 6 tablespoons Raw Peanuts (Moongphali)
- 1 tablespoon Black sesame seeds
- 1/2 tablespoon White Sesame seeds (Til seeds)
- 3 Dry Red Chilies
- 2 tablespoons Fresh coconut, grated
- 1 Onion, finely chopped
- 1 cup Carrots (Gajjar), grated
- 1/2 cup Dill leaves, washed and chopped

Instructions:

In a pan, dry roast 3 tablespoons of peanuts, white sesame seeds, black sesame seeds, and red chilies until they become aromatic. Once roasted, turn off the flame and set aside to cool.

In a mixer jar, add the grated coconut along with the toasted peanuts and sesame seeds. Grind them to a coarse mixture and set it aside.

Heat oil in a kadai (wok) over medium flame. Add the remaining 3 tablespoons of peanuts, urad dal, and chana dal. Fry until the peanuts are roasted, and the dals turn golden brown and crisp. Be sure to roast them on low to medium heat for even cooking.

Once roasted, add curry leaves and sauté for a few seconds. Then, add the chopped onions and sauté until they soften.

Add the grated carrots and chopped dill leaves. Sprinkle a little water and cover the pan to cook for about 5 minutes until the carrots soften.

Stir in the ground peanut-sesame-coconut mixture and cooked rice. Mix well and season with salt to taste. Cover and simmer for 3 to 4 minutes to allow the flavors to blend.
