After experimenting with savory zucchini dishes, I decided to try something sweeterβa zucchini cake! This wholesome treat is made with nutritious whole wheat flour, eggs, yogurt, and of course, zucchini. The combination of yogurt and zucchini results in an incredibly soft and moist cake. Perfect for a snack or tea time!
Ingredients:
- 1 cup Whole Wheat Flour
- 3/4 teaspoon Baking powder
- 1/2 teaspoon Salt
- 1/2 teaspoon Baking soda
- 1/2 teaspoon Cinnamon Powder (Dalchini)
- 3/4 cup Sugar, powdered
- 2 Whole Eggs
- 1/4 cup Oil
- 1/4 cup Curd (Dahi / Yogurt), thick
- 1 cup Green zucchini, grated with peel (squeeze to remove excess moisture)
- 1 teaspoon Vanilla Extract
- 1/4 cup Walnuts (chopped) or chocolate chips (optional)
Preparation Time: 20 minutes
Cooking Time: 35 minutes
Instructions:
- Preheat your oven to 180Β°C and grease your cake mold with oil.
- In a bowl, combine whole wheat flour, baking powder, baking soda, salt, and cinnamon powder. Sift this dry mixture through a fine sieve and set aside.
- In a separate bowl, beat eggs with an electric beater on high speed for about a minute. You can also use a hand whisk.
- Add sugar to the beaten eggs and continue beating on high speed until the mixture becomes pale and fluffy.
- Add oil, curd, and vanilla extract to the egg mixture. Beat at medium speed until well combined.
- Gradually add the sifted dry ingredients to the wet mixture and mix on the lowest speed until just combined. Do not overmix.
- Using a spatula, gently fold in the grated zucchini. If using, add walnuts or chocolate chips at this stage.
- Pour the batter into the prepared cake mold and bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, let the cake cool slightly before serving.
Serve the Whole Wheat Zucchini Cake with a cup of Espresso Coffee and a Scrambled Egg Sandwich with Cucumber for the perfect tea-time treat!
