- 2 cups lentil water (chana dal water)
- 1 cup water
- 3 cloves
- 2 whole black pepper
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 bay leaf
- 5 curry leaves, broken
- 1 teaspoon grated jaggery
- 1 teaspoon tamarind paste (adjust as needed)
- 1/2 teaspoon Goda Masala
- 1 tablespoon oil
- Fresh coriander leaves, chopped
- Salt, to taste

Instructions:

Begin by mixing the lentil water (chana dal water) with regular water and set it aside.

Heat oil in a saucepan over medium heat. Add mustard seeds and cook for about 10 seconds until they begin to splutter.

Add cloves, bay leaves, and black pepper to the saucepan and cook for another 20 seconds.

Next, add cumin seeds, curry leaves, and chopped coriander leaves, allowing them to sizzle for 30 seconds.

Pour in the lentil water, jaggery, tamarind paste, Goda Masala, and salt. Stir well and bring the mixture to a boil.

Once it reaches a boil, reduce the heat and simmer for a few minutes, then remove from heat.

Serve hot with Puran Poli during festivals or as a delicious accompaniment to any meal.
