- 1 teaspoon Cumin seeds (Jeera)
- 1-inch Ginger, finely chopped

- 1 teaspoon Turmeric powder (Haldi)
- 1 teaspoon Red Chilli powder
- 1 teaspoon Garam masala powder
- 1 cup Rice, washed
- 1/4 cup Carrots (Gajjar), chopped
- 1/4 cup Green beans (French Beans), chopped
- 1/4 cup Cabbage (Patta Gobi/ Muttaikose), thinly sliced
- Salt, to taste
- 2 cups Water (for cooking rice)
- Chopped Coriander (Dhania) Leaves, for garnish

Prep Vegetables: Start by preparing all the vegetables—chop the carrots, beans, and cabbage, and set them aside.

Cook Spices: In a pressure cooker, heat 1 tablespoon of coconut oil over medium heat. Once the oil is warm, reduce the flame to low and add cumin seeds. Sauté for 1 minute. Add the finely chopped ginger, garlic, and onions, cooking until the onions turn soft and translucent.

Add Tomatoes & Spices: Stir in the chopped tomatoes and cook until they soften and become mushy. Add turmeric powder, red chili powder, and garam masala powder. Mix everything well, ensuring the spices coat the onion and tomato mixture evenly.

Add Rice & Vegetables: Add the washed rice, chopped carrots, green beans, and cabbage (and peas, if using). Stir gently to coat the rice and vegetables with the spices.
