Ingredients:

  • 1 cup rice (washed and soaked in water for 30 minutes)
  • 1/4 cup green beans (finely chopped)
  • 1/4 cup carrot (finely chopped)
  • 1/4 cup broccoli (chopped)
  • 1/4 cup green peas
  • 1 cup coconut milk
  • 1 1/2 cups water
  • 1/2 tsp ginger (grated)
  • 3 whole black peppercorns (crushed)
  • 1 lemongrass stalk (cut into 2-3 pieces)
  • 2 tsp oil
  • Salt to taste

Preparation Time: 15 minutes
Cook Time: 25 minutes

Instructions:

  1. Heat oil in a pan. Add ginger and chopped vegetables. Cook for about 2 minutes.
  2. Add rice to the pan and stir well to combine.
  3. Pour in the coconut milk, water, lemongrass, crushed black pepper, and salt. Bring it to a boil.
  4. Once it starts boiling, reduce the heat to low, cover the pan, and cook until the water is absorbed and the rice is cooked through.
  5. Turn off the heat and let it sit, covered, for 8 to 10 minutes.
  6. After resting, remove the lemongrass stalks and fluff the rice.
  7. Serve the Lemongrass Coconut Rice with a side of Red Thai curry for a complete dinner meal.
